Michael Scholz is vice president of the company, co-founder of the KNEADING Conference, owner of the Albion Bread Farm, family man and master swimmer. In 2005, Michael started the Albion Bread Farm, a closed loop farm, mill and bakery at his home in Albion, Maine. Michael began learning from millers in Maine, California, and New Brunswick, Canada, the arts of milling with and dressing granite stones. With the help of neighbors Henry Perkins of Bull Ridge Farm, and Johnny's Selected Seeds, he gleaned knowledge of the growing and processing of small grains that he would mill for his breads. Through Michael's baker and farmer friends and through sales at his farmers market, it was evident that there was a healthy demand for much more Maine grown grains and flour.
