Sirvinta wheat is a newly available Estonian heritage wheat at Maine Grains that is making a resurgence here in Maine thanks to the efforts of the Maine Grain Alliance. Richard Roberts, Director of the Alliance’s Heritage Seed Restoration Project planted a plot of Sirvinta with seed from one of Maine’s master seedsman, Will Bonsall. This flour has excellent flavor and perfect for all-purpose use and long-ferment breads. Extremely limited supply.
